On Cooking

The worst part about cooking, is the actual process of learning to cook. Specifically, the resultants of learning to cook, which consist primarily of largely unappetizing creations, this then destroys any desire to cook again, less you end up with something even worse then before. This vicious spiral is extremely difficult to overcome, and best rectified by aligning yourself with another person who doesn’t suffer from said spiral.

At least, that’s how I’ve been approaching it.

  1. Silly Nicky… cooking is chemistry! You don’t attempt to go off recipe until you have mastered junior.. maybe even senior year classes 😉 Secret to pasta sauce: sutee your veggies in extra virgin olive oil and garlic, use regular tomato sauce, put Italian seasoning, salt, pepper and some red wine in. Let it simmer and taste, toss in your veggies. Add more of the above until it tastes perfect 😉

Uncle Wayne’s Perfect Alfredo Base: 2 cups of milk, 1 8oz package of cream cheese, 1 stick of butter, grated cheese (not the Green Kraft stuff but real cheese!). Put milk, cream cheese, butter in pot and melt. Add cheese to thickness desired. Add spices/veggies as wanted to change the dish. For example Parmesan cheese with black pepper, garlic, broccoli, mushrooms over pasta with chicken.
